My friend left me his sourdough starter to feed while he is away. And so I made sourdough focaccia 😁 This is a simple recipe that you can customize at will, and taste, and just requires fresh ingredients you have at hand in your kitchen.

Ingredients:

100 grams of sourdough starter, if your starter has not finished its fermentation, the focaccia will not rise or bake properly

100 grams of water, preferably at room temperature

100 grams of flour: best is to combine whole wheat with all-purpose flour with the proportion of 1 to 3

3 tablespoons of olive oil

1 teaspoon of fine sea salt

 

Toppings:

Small cherry tomatoes, olives green or black according to your liking 

Rosemary to taste

Flaky salt

 

In a large bowl, whisk the starter with the water.

Add 2 tablespoons of olive oil and mix well.

Add the flour and the salt and combine well.

Place the dough in your form/cast and cover it with a kitchen towel. Let it rest for at least 2 hours. The dough should rise to double its size. Depending on the temperature and humidity of your kitchen as well as your starter, this could take more or less time.

Use your fingers to poke the dough and create small cavities.

Drizzle the remaining olive oil and place your chosen topics as you please. It can be fresh herbs from your garden, cheese, olives, nuts, etc.

Place in the air fryer for 4-5 minutes at 200 degrees Celsius. You can choose to bake your dough in the conventional oven. This will take more time, around 30 minutes, or until it turns golden brown.
