I remember the day I got diagnosed with Celiac Disease, back in December 2017. 

I recall heading back home with lots of overthinking going on in my head.

To be honest, my biggest concern was how I would break the news to mom. Will she understand? How will she adjust her cooking to my needs?

Once home, the lunch that was served was in general celiac friendly. It was steak and potatoes, along with my favorite Lebanese salad on the side, tabbouleh, which contains a lot of bulgur. 

I was so angry as I was still discovering what I could and could not eat but my mother's composure surprised me a lot. She kept reassuring me and she told me that she will handle things with me.

The very next day, she made me a tabbouleh salad, replacing bulgur with quinoa. I was shocked at how fast she started planning our transition.

More than 3 years later, she makes gluten-free omelets, crepes, and bread, gluten and sugar-free cakes, as well as a variety of gluten-free chicken and ham escalopes.

To be honest, the only recipe I helped look for was gluten-free bread. Everything else was a pure effort by my champion. 

Today she's 56, blind, and still eager to discover food and other aspects of her life more than ever! Which is proof that one can always learn, no matter how tough things get.
