My youngest brother is not much into sweets. Me neither. I discovered he enjoys the turmeric cake I make and now I have been making it more often. On the health benefits of turmeric, check my previous post here.
The following will serve 12 to 14 people.
Ingredients:
3 cups of fine semolina
1 cup of all-purpose flour
2 cups of agave nectar, you can replace this with sugar
2 large teaspoons of turmeric powder
2 1/2 teaspoons of baking powder
1 cup of neutral / vegetable oil
1 1/2 cups of milk, I use skimmed milk but full fat can also do
1 pinch of salt
Raw half almonds and sesame seeds to taste for the decoration
I use an 18 cm round stainless pan with removable bottom. That way I don't need to grease it and it's very easy to remove the cake once baked. Preheat your oven to 200 degrees celsius.
In a large bowl, mix all the dry ingredients with a pinch of salt. Add the oil and the milk and stir well until you have a homogenous batter. Pour the mixture into the pan. Decorate with sesame seeds and half almonds. You can use pine nuts if you have some.
Baking time should be around 45 to 50 minutes. To make sure your cake is well baked, insert a toothpick in its middle. When it comes out clean, the yummy treat is ready!
Let the sfouf cool down before cutting it. It can be served with a cup of tea or coffee, or even a cup of hot chocolate (see my recipe for a yummylicious hot chocolate here).
