We were kids and we loved coconut! Not only the fruit that dad used to buy for us and let us crack open to drink its milk. Also, the coconut balls that mom used to make for us as a treat 🥰

Wanting to recreate those moments, I asked mom for the list of ingredients and the way to do these heavenly and mouthwatering bites. It seemed quite easy to replicate... but I miserably failed at it 😵‍💫

I gave up on trying the mix work... I decided to turn it into a cake!

One batch will require the following ingredients:

1 can of Nestlé condensed milk

1 can of Nestlé skimmed milk and vegetable oil 

400 grams of grated coconut

4-5 finely ground plain biscuits

2-3 ripe bananas

1 1/2 cups of flour

1 teaspoon of vanilla extract

1 teaspoon of baking powder

1 pinch of salt

 

The coconut balls only require the first 4 ingredients that you mix well in a bowl and then place in the fridge for about 5-6 hours or until the batter is firm. Then you can use the palm of your hands to make small spherical forms and you replace them in the fridge for another couple of hours. Unfortunately, my batch did not get firm. I thought I didn't add enough coconut. And increase the coconut content. Twice. To no avail. So instead of throwing away my concoction, I just added what would make a cake, except for the eggs, pre-heated my oven to 200 degrees Celsius and baked the dough for about half an hour.
