This traditional Brazilian food usually served in shells, is not complicated to prepare.
For about 12 servings, you will need:
400 grams crab meat, preferably fresh
1/2 large lemon for juice
30 grams butter
1 small mashed potato
1 medium-sized tomato, peeled and diced
Crustless sandwich bread (pain de mie)
1 garlic clove
1 very small onion
150 ml coconut milk
1/2 can of Nestlé cream
1/3 cup of white wine
1/4 cup shredded black olives
2 tablespoons of chopped parsley
1 tablespoon of chopped coriander
Grated parmesan
Coconut flakes
Salt and pepper to taste
12 empty scallop shells
Season the crab with lemon juice. While the bread is soaking in the milk and the cream, sauté the finely chopped onion and garlic in a pan. Add the tomato, and keep heating it until its juice has evaporated. After a few minutes, add the bread mix, the mashed potato, and the crab meat to the pan. A minute or two later, pour the wine into the mix and stir well. Season with salt and pepper. Stuff the shells with the mix and add the olives. Sprinkle with the grated parmesan, and the coconut flakes and bake in your oven until golden brown. Serve warm.
If you don't have crab meat, you can replace it with white fish filet and small prawns. it tastes just as yummylicious!
