It's summertime and the living is... hot, hot, hot 🥵 

This recipe is super easy and can be prepared in no time (less than 10 minutes).

 

 

You will need the following ingredients (bowl for 2):

- 350 grams of watermelon

- 90 grams of feta cheese

- fresh mint

- a squint of lemon juice, to taste

- extra virgin olive oil, to taste

- health seeds: I mix organic chia, flax and hemp seeds but you can use whichever you prefer

 

Scoop and chop the watermelon flesh in chunks. Remove the peel. It's better to also remove the seeds. Some people don't mind eating them, I prefer to leave them out. Tip: start at the middle of the watermelon, that's the juiciest, sweetest part and it has the less seeds too!

Crumble de feta cheese. Pick the mint leaves.

Combine all the ingredients in a bowl. Squeeze a tiny bit of lemon juice over it, drizzle some olive oil, add the health seeds. Et voilà! Your fresh evening salad is ready!
