The ingredients are basic and customizable:
1 tsp of coconut oil
2 tbsp of all-purpose flour
3/4 cup of nutritional yeast
1/2 cup of water
Spices: salt, paprika powder, curry powder, and garlic powder
You will use the methodology of preparing a roux. Heat the coconut oil a little in a pan. Add the spices and whisk. Add the flour and whisk. Add the nutritional yeast, also called nooch, and whisk. The mix will clump and form lumps. It's ok. Add as much water as needed to make the sauce smooth and creamy. And you are done! This is a nutty -without nuts- sauce that can double as a dip with tortillas or chips, or be used to make macaroni and cheese. You can customize the ingredients to make the sauce stretchier or more liquid as per your preference.
To note: nutritional yeast is gluten-, sugar-, and soy-free and loaded with nutrients, vitamins, minerals, and antioxidants. It has a nutty taste without containing any nuts. It is still not for everyone to be consumed. People with hypertension, glaucoma or inflammatory bowel disease should avoid nutritional yeast. I buy it from the supermarket in the organic section.
