My aunt used to bake this hearty and healthy dish quite often. And I would enjoy it every time!
For 4-5 servings, you will need the following:
450 grams of frozen puff pastry
600 grams of spinach leaves, I use a frozen pack
450 grams of cottage or feta cheese, I prefer cottage cheese because it is less salty
1 large onion
1/2 cup of pine nuts or chopped almonds
1 egg yolk
1 tablespoon of milk
A mix of herbs to taste: pepper, grounded nutmeg, oregano, ginger powder, red paprika
Salt and pepper to taste
In a frying pan, warm the pine nuts or chopped almonds. After a few minutes on low to medium heat, add the finely chopped onion that needs to be caramelized. You can add some ginger powder to it as well as some pepper. Another few minutes, then add the spinach to the mix. Set the heat to very low, because the contents of the pan will be cooked later in the oven. Then place the pan aside to cool off. Meanwhile, roll out the puff pastry and make sure it is a maximum of 1/2 cm thick. Don't make it too thin, it wouldn't hold the filling and break. Once ready, brush your oven tray with some oil and place the dough in it. Now add the cottage cheese to the spinach filling and mix it well. Spread it evenly on the dough in the middle while keeping the sides free. Brush the sides with the egg yolk mixed with some milk so that the form holds together. Fold the dough to make the turnover (see picture) and press with a fork on the sides to avoid any filling spilling out. Brush some more egg yolk with milk on top of the turnover for the golden color. Bake in the oven at 180 degrees Celsius. Take out when the crust turns to gold and serve warm.
