Let's get something clear from the start: in Lebanon, we don't make this parsley salad with cucumber.

For a large bowl to serve 6 people, you will need:

2 large bunches of parsley

3 medium ripe and juicy tomatoes

2-3 small green onions

1/2 cup fine bulgur, washed and well-drained

2 large juicy lemons

Extra virgin olive oil - be generous, it will help the flavors show

A pinch of seven spices

Optional: fresh lettuce leaves

Salt to taste

 

Start by whisking the oil and lemon juice with a pinch of spices until fully blended. Mix the bulgur with the dressing. This allows the bulgur to soak and soften. Set it aside while you prepare the vegetables.

Chop the parsley finely. Dice the tomatoes. Mince the onions. Pour the dressing over the vegetables and gently mix everything.

Et voilà!

You can serve this salad to be eaten with lettuce leaves. If you are wheat or grain intolerant, you can replace the bulgur with quinoa. It's not quite the same taste, but you still savor the flavors of the dressing. This salad, which is quite refreshing, is a hit all year round. We serve it as a side dish with the mezze or as a salad.
