This fish tagine will feed 4 people. You will need:
For the sauce:
1.5 cup of tahini
3/4 cup of lemon juice
2 cups of water
1 pinch of salt
1 pinch of paprika
1 pinch of black pepper (to taste)
For the fish:
1 kilo of fish filet
1 medium-sized onion, cut in wings
1 medium-sized tomato, cut into small pieces
1 lemon, sliced
1 pinch of coriander
1 pinch of paprika
Cinnamon and salt to taste - I sometimes add lemon mustard powder. It gives an additional zest 🙂
Olive oil
Start by seasoning the fish with some olive oil, salt, black pepper, paprika, and lemon mustard powder. Place on a baking tray and add the lemon slices, bay leaves and cinnamon. Bake in the oven at 200 degrees celsius for about 15 minutes.
Meanwhile, toss the sliced onion, tomato and coriander into a pan with a drizzle of olive oil. Sprinkle with salt and paprika and stir well with a silicone spatula. While they are getting cooked in the pan at low to medium heat, prepare the tahini sauce by combining all the ingredients listed above 👆🏻.
When the fish is ready, remove everything hard from the baking tray, except for the fish obviously, add the mixture of the pan on top of it and finally the tahini sauce. Garnish with fresh coriander and serve! If you don't have coriander, you can replace it with finely chopped parsley for your final presentation.
