Cauliflower Crust Pizza

Looks and tastes delicious!

I stumbled upon a recipe by Dr. Berg and had been toying with the idea of giving it a try. And I finally did! It was very easy to prepare and yummylicious.

For 6 portions, you will need:

2 cups of grated cauliflower florets

4 cups of grated cheese of your choice: I used a mix of mozzarella, cheddar, Emmental, and Edam

2 eggs

1 cup of sliced fresh mushrooms. You can use canned mushrooms. I prefer the taste and looks of the fresh ones

1/2 red bell pepper, thinly sliced

1/2 yellow bell pepper, thinly sliced. You can replace or add other

1/3 cup shredded black olives

350 ml of fresh tomato sauce. I like my pizza juicy, you can reduce this amount if you like less sauce

Ginger powder, garlic flakes, dried/fresh herbs to taste

 

Start by washing the cauliflower and let it dry thoroughly beforehand. I used my Nutribullet blender for the cauliflower granulate. You can grate the florets manually. Just make sure no larger chunks remain to make a smooth dough.

Preheat your oven to 210 degrees Celsius.

To prepare the crust, whisk the cauliflower with 2 and a half cups of cheese and the eggs. You can do that with a whisk or a fork. There is no need to use an electric tool for this operation. Also note that there is no need to add salt: cheeses are usually salty and the toppings include salt as well. Once the mix is homogenous, place a baking sheet in your pan and spread uniformly to the thickness of the crust that you like. There is also no need to add oil to the sides of the pan: yellow cheeses contain fats that will release fat when melted.

Place the pan in the heated oven for about 7 minutes. The color should turn slightly golden.

Meanwhile, let's prepare the sauce. In a bowl, combine the tomato sauce with the herbs, garlic flakes, and ginger powder. You can also add the shredded olives to infuse them with the flavors.

Take out your pan from the oven. Spread the sauce. Add the toppings. I made a vegetarian pizza. But you can easily garnish your pizza with pepperoni slices, basil leaves, or even pineapple chunks. Ok don't tell the Italians I told you that, ok? Sprinkle more cheese on top and bake until golden brown.
