I am a huge fan of beetroot. Let me start with highlighting beetroot's benefits, which include the following:

  1. Helps regulate blood pressure
  2. Improves exercise stamina and muscle power
  3. Heart friendly food
  4. Helps you maintain a healthy weight
  5. May prevent cancer
  6. Good source of potassium
  7. Good source of other minerals.

And trust me there are more benefits to count, but I am making sure I keep this one short and to the point.

So, first, the ingredients, again, are good for two portions:

  • 500 grams of beetroot
  • 32 grams of Corn Flour
  • 32 grams of skimmed milk powder
  • 160 grams of chopped onions
  • 2 cups of water
  • 1 tsp of olive oil
  • 1 teaspoon of Turmeric

Now, let’s move to the cooking instructions.

Step 1: Wash the beetroot with water.

Step 2: Chop the onions and the beetroots. Boil the beetroots on low heat for 40 to 60 minutes. Then add two cups of water.

On the side, pre-heat the onions with a teaspoon of olive oil for 10-15 minutes on low heat as well.

Step 3: Keep mashing the beetroots while adding them to the onions. Then, add the Corn Flour and Milk Powder.

Step 4: 5 minutes before your dinner, keep stirring the whole mix while boiling it on low heat for 5 to 7 minutes. And then, you’re good to go!

If you are someone who loves spices, adding chili would be a great option.

Lastly, and before we wrap up, here is my favorite part, the macros per one serving:

  • Calories: 223
  • Carbs: 37 grams
  • Fats: 3 grams
  • Proteins: 12 grams

Pairing this with a protein and fats source on the side would make the perfect high fiber, high protein dinner!
