Some German potato salads include bacon as one of their garnishing ingredients. In Bavaria, where I spent my teenage years, a German potato salad is vegetarian. You could replace bacon with bits that are made of soy or skip that ingredient.
For 4 servings, you will need:
3 cups of diced and peeled potatoes
1 small diced onion
1/4 cup of white vinegar
1 1/2 tablespoons of white sugar
1 teaspoon of mustard flakes
1 teaspoon of salt
A pinch of ground black and white pepper
Chives
1 teaspoon of coconut oil or vegetable oil
Place the potatoes in a large pot and cover them with at least 5 centimeters of water. Add a pinch of salt. Bring to a boil. When you can pierce the potatoes with a fork easily, drain, and set aside to cool.
Cook the onion with the oil in a skillet for about 7 minutes. Add the vinegar, sugar, salt, mustard, and pepper. Bring to a boil. Add the potatoes and cook for another 3-4 minutes.
Transfer the potatoes to the serving bowl and garnish with chives.
