Whenever I am not in the mood for cooking, and still want to have something warm, and because I love cheese, obviously, onions, and mushrooms, I prepare this dish that requires very little preparation and is a delicious treat!
For 4 portions, you will need the following:
400 to 450 grams of egg Spaetzle, I buy them ready-made from any German supermarket. You can make them at home too, but that will be shared in a different post
250 grams of grated Emmental cheese
150 grams of grated Cheddar cheese
100 grams of grated Edam cheese
75 grams of button mushrooms, finely diced
1 large purple onion, diced
Garlic flakes
Ginger powder, herbs, ground peppers to taste
On medium heat, use a small pot or a larger pan and start by glazing the onion with some coconut oil. No need to burn or brown it. I like it crunchy. If you prefer it to be softer, allow a few more minutes for the diced onion to cook more. Add the ginger powder, the garlic flakes, and some of the dried herbs to the onion and let them get heated for another few minutes.
When your onion is the way you enjoy it, add the mushrooms and let them blend in the flavors for around 4-5 minutes on low to medium heat. Remember, we don't want to scorch the onions!
Add the Spätzle and stir. Cover the pot or pan and let the egg pasta cook for at least 3-4 minutes. Then add the Cheddar, the Edam, and some of the Emmental cheeses. Add some pepper. Mix and lower the heat. Cover the pot or pan for a few minutes. When you see the cheeses starting to melt, sprinkle the remaining Emmental cheese and ground black pepper on top. Cover and let simmer until the cheese is uniformly melted and has a slightly darker shade of yellow.
Serve with some parsley for decoration. Best relished when warm, this dish can be conserved in the fridge for later consumption within a couple of days.
For the non-vegetarian readers, I used to make it with bacon and lard. You add these at the glazing step to cook with the onions. Follow the remaining phases as per the above.
