For this large bowl of salad, enough for 6 large servings, I used the following ingredients:
2 cups of fine lentils, you can use the type you like
1 medium yellow bell pepper, diced
1 medium red bell pepper, diced
5 small cucumbers, diced
5 medium radishes, cut in small
1 avocado, diced
1 handful of baby spinach leaves, shredded. You can replace these with arugula leaves
Black olives
1 lemon
Mustard and olive oil to taste.
First, cook your lentils until they are soft, but not too soft. In my Instant Pot electric cooker, I poured 1 liter of drinking water, added some salt and used the Bean/Chili program. It took about 10 min for the lentils to be ready. Drain well in a sieve and wash up with cold water to stop the lentils from overcooking and becoming mash. Place in the bowl. Add all the diced vegetables and mix gently.
For the dressing, mix the Dijon mustard and virgin olive oil well. Squeeze the lemon. Pour all gently over the bowl and blend all ingredients together. Et voilà!
To note: this is a healthy dish with which you can get creative and add pomegranate for example. Or any other ingredients you enjoy.
